Last week I started working at awesome pop up restaurant Laboratorio. It is called a pop up restaurant because every few months the menu and the chefs change. Laboratorio recently opened its doors with its latest concept: La Hueca.
A hueca is an informal Ecuadorian restaurant serving traditional food, and the idea behind Laboratorio´s Hueca is to give well-known typical dishes a new lease of life; delicious food made from Ecuadorian ingredients with a contemporary, gormet touch.
Rather than containing starters and mains, the menu is crafted around the idea of sharing. The dishes are small and groups are recommended to select several in order to try a variety of flavours. Think of it like tapas!
The menu contains ceviches, palitos (mini brochettas), sandwiches, laminados (like carpaccio but with fish) ice creams and more! Fresh fruit smoothies, bloody maries (with Ecuadorian spirit caña manabita, not vodka), craft beers and gin and tonics are also available. Check out the full menu here. I work in the bar and as waitress and can guarantee that everything on the menu has been carefully thought out and is absolutely delicious!
The ingredients are sustainably sourced and where possible, are bought from small local suppliers.
The Laboratorio building was formly a wire fabrication works, which provides a unique, industrial interior design:
many original features remain and materials from the factory were used in the creation of the restaurant.
The attention to detail even extends to the crockery and glassware – sauces are served in test tubes, and drinks in beakers:

which not only permits customers to see how spotless it is, it also allows them to watch the talented chefs create the works of art that are served at La Hueca!
Additionally, during quieter moments, the chefs like to explain dishes and ingredients to diners. Be sure to sit near to the kitchen to watch the magic happen!

This restaurant looks sooo cool. I love the industrial style mixed with the laid-back attitude of sitting in on the back porch of a friends house. The food looks amazing too and sharing small plates is such a fun way to try new things. I’ll have to tell my friend from Ecuador about this place, so he can try it next time he is back in Quito.

I love the beaker/ test tube touch to keep some of the laboratory feel! Sounds like an awesome concept… Do some of the pop ups go on to be permanent?

How great that pop up restaurants are taking off in Quito. I love finding gems like this around the world that really focus on sustainable local ingredients. We may find ourselves in Quito in the next year or so, and will certainly stop by to say hello and get a drink if we do!
